Chocolate lasagna anyone ?


I made a dessert some weekends ago
and
it was chocolatey, yummy and totally without calories ???
easy to make 
a little tip though 
don't have it as a dessert after a dinner....
better in the afternoon when you really crave something sweet with the coffee


                                                                      -36 Oreo-kex.  36 oreo's
-6 msk smält smör. - 6 tbs melted butter
-1 paket färskost (typ Philadelphia).- 200 gr Philadelphia cheese
– 4 msk socker - 4 tbs sugar
– 7 dl kall mjölk.- 7 dl cold milk
– 1 paket vispgrädde (5dl).- 5-7 dl whipped cream
– 2 paket chokladpudding.- 2 packages of chocolate pudding mix
– 1 kopp med krossade chokladkex - topping: chocolate crackers or chocolate

Lägg dina Oreos i en påse och krossa med brödkavel. Tillsätt det smälta smöret i påsen och blanda ihop. Crush the oreo's and mix with the melted butter
3. Sprid ut kakblandningen i botten av ugnsformen och ställ i kylskåpet i 5 minuter.
Pour the mix in a pan and refrigerate while you do the next latyer
4. Blanda färskosten med 2 msk mjölk och socker i en skål. Häll i 2,25 dl vispgrädde och häll över första lagret i ugnsformen. Låt stå i kylen i ytterligare 5 minuter. Mix the cheese with the sugar and mix with the whipped cream ( 2.25 dl)Pour over the ores and into the fridge while you do the next layer
5. Ta en separat skål, vispa ihop kall mjölk med chokladpuddingspulvret. Häll denna blandning över toppen av färskostskiktet och sätt tillbaka i kylskåpet i ytterligare 5-10 minuter så att puddingen sätter sig. Add the cold milk with the pudding mix and whisk until thicker and then pour over the cheese and into the fridge while yu prepare the whipped cream.
6. När puddingen har satt sig, vispa ihop resten av vispgrädden och häll på chokladlagret.When the pudding is set get the whipped cream on top and then decorate with crackers or chocolate on top
7. Toppa med krossade chokladkex och låt din lasagne stå i kylen i 3-4 timmar.Let it sit for a couple of hours in the fridge
8. Servera, njut, och försöka att inte dregla…Serve,enoy and try not to drool....

Rhubarb pie

as promised....the rhubarb pie....
made from home grown rhubarbs


I wasn't sure if everybody has seen rhubarbs....they are pretty in a vase too....


easy peasy pie....it was actually my son Anton that started making this one and it has turned into my favourite....lots of yummy calories...


tastes so good with fluffy vanilla whisk...

Banoffee pie is good for you !




this pie is just so incredibly tasty....no calories at all...easy to make....
all you need is

14 digestive crackers
100 gr butter

a can of condensed milk (400gr)
115 gr brown sugar
115 gr butter

4-5 bananas
4-5 dl whipped cream
dajm chocolate

make the pie crust of butter and crackers...cool..
I found this recipe where you get toffee sauce in three minutes instead of boiling the can for 3 hours...
melt the butter and stir in the brown sugar and stir until sugar is dissolved and merges with the butter then stir in the condensed milk and stir constantly ...let it bubble while stiring for 3 minutes..done..
fill the pie crust and let it cool for a couple of hours
cover the toffee with the banana bites
whip the cream thickly and fill the pie
add chipped dajm chocolate on top
ready to serve
enjoy 
and remember
to always
make it "too big" so that you will have leftovers...
it tastes even better the day after

I just had a big piece with my coffee !!

A day to late I wish you all a Happy Valentines day !

I know I'm a day late with my wishes but....better late than never ...or ?
the reason why is that I once again got sick....hopefully by now I've had my share (touch wood) of whatever Indian flu or Delhi belly or whatever it was that has hit me twice within a period of three weeks..anyhow....
Mr M cheered me up with a cup of soup and some wonderful roses yesterday though...
(no no picture of the cup of soup..)


my contribution to Valentines day had to wait....so today I made Mr M favourite.....(well,I had made the cupcakes before hand and put them in the freezer...as if I knew that I would get sick)


chocolate cupcakes with buttercream frosting on top....


and since it being Valentines I just had to make "pinkish to reddish" frosting....turned out really nice I think....and it was kind of fun to do the shades.....


I usually don't really like cupcakes but this time I used a new recipe and they turned out moist and nice....interested in it ? drop me a line......

Second sunday of advent in the House of Susanna.

I can't believe that it's already the second sunday of advent…time just fly by when you are having fun….or when you have a lot of things to do….today we've just had a lazy sunday at home…we did work out and then I started preparing for making


saffron macrons with orange buttercream…oh so good….and I made oh so many….first time I did these with saffron….so fun to try and make new ones…I only wish I had a food scale,weighing machine…when you make macrons it's really important that you weigh the ingredients…otherwise they turn out a little "weird"…. anyhow mine almost turned out the way they should….


 then I also made lucia buns-saffron buns….again yummy….made them small because they are for a special occasion this week…I need plenty of them….so after an afternoon with all this baking our house smells so wonderfully saffrony…it really smells like christmas again…


today it was only Mr M and I who lit the candles…of course we had to taste the macrons and the buns. I can tell you that the taste of orange goes well with saffron, as if you didn't know....today we didn't heat up the glögg though….we made hot chocolate with rum instead…


we also decorated the christmas tree…since my mother left yesterday morning we did a little decorating before she left…just so that we all can get into the christmas spirit…I don't think my mother has a christmas tree at home so…it turned out just fine don't you think ? I made the star in the top…one of my D.I.Y projects….if you're interested in how to make them I'll show you…also if anyone wants to make the saffron macrons please let me know and I'll post the recipe.

On request..christmas in a cake recipe.


so here comes the recipe to this yummy orange polenta cake….I made it in a 26 cm baking pan with removable edges…I put baking paper in the bottom and on the sides….

6 oranges
120 gr butter
150 gr sugar
3 eggs
140 gr polenta
120 gr grounded almonds
1 tablespoon flower ( overfilled )
2 teaspoons baking powder
2-3 teaspoons grounded cloves

for the sirup to put on top:

the juice from 1-2 oranges
about 1.5 dl sugar
1teaspoon grounded cloves
the above is depending on how much sirup you want to put on the cake

start out with chopping 2 oranges with peel and all and put in a pot with a little more than 1 dl water. Let it boil for about 20 minutes…put a lid on…don't want it to boil dry. Stand aside and let it cool off.
Whisk together room temperated butter and sugar. REALLY whisk it together,
Add one egg at a time and beat it in.
Add the polenta,almonds,flower,baking powder and the grounded cloves. Whisk together.
Chop the cooled boiled oranges…chop them well….mix it in.
Cut of all the peel and the white on the oranges and slice them thinly.
Put the slices in the baking pan starting in the middle and then working your way out to the sides.
Poor over the mixture and bake in the middle of the oven in 180 degrees for about an hour.
Take it out of the oven and turn it upside down and slowly peel of the baking paper.
Poor over the sirup ... you make it like this:
put juice,sugar and  grounded cloves in a pot…stir and let it boil on low heat until it gets thick..like sirup…avoid stirring…
poor over the cake..
enjoy with either whipped cream with some vanilla in it or vanilla ice cream.
I discovered that the cake was actually even better the day after !

First sunday of advent in the house of Susanna.


even though I'm are far away from "home" it doesn't mean that I can't stick to traditions…I just have to do with what I can find here…and some D.I.Y projects…
advent candleholder out of mango juice bottles (preferably empty), white paper and ribbon from all my shopping bags, stars made out of wrapping paper or again shopping bags…so much fun to make these stars…the christmas tree I bought of course…isn't it cute ?


when we where driving home from the national park I said " since we are so cold we really need go home and warm up the glögg…hahaha"….the AC was on and we where anything but cold….. a couple of hours later though
I lit the star in the window….and also the BIG one in one of the guest rooms


I turned on christmas music and started to prepare for….


glögg with almonds and raisin….and yes I had to make my own out of red wine, spices (cinnamon sticks,cardamom seeds,cloves and some sugar) and vodka ! (it actually turned out quite ok according to Mr M and Mrs S since I don't drink glögg)
gingerbread cookies with Danablue cheese and fig marmalade,gouda cheese, dades wrapped with bacon, christmas cookies and of course we did light the first candle….



I used cinnamon sticks instead of spoons ……..it wasn't easy to get the raisins and almonds out of the glass with those but they looked good and it made the glögg taste even better….
we did get a feeling of christmas coming along….next time I'm going to try and make white glögg out of apple juice !? sounds good ?

Christmas in a cake ?

Today I made this orange polenta cake with cloves and all of a sudden my kitchen smelled like Christmas..


a little different cake since it has polenta and lots of grounded cloves in it….I saw it being made in one of the best TV series ever….the spice trip….it was only 6 or 7 episodes but it was so interesting….anyhow, in this episode they go to Zanzibar and tell us everything there is to know about cloves….how it grows and how it's picked…how to use it in cooking and baking..if you get a chance to see it do so…that is if you like spices…
anyhow, the cake was yummy with some whipped cream…so fresh…

Mela time....

I just got back from a Mela that Gurgaon Connection organised......


Melas are always fun ....lots of vendors...lots of people and good food.
 Guess what, I didn't buy a single thing...but I met some interesting vendors from Australia  ( we'll they are from down under but live and work here )...maybe something for the swedish market....we'll see.....
I told you I didn't buy a single thing....


but I bought these....hmmmm...danish almond pastry and " I go nuts for " donuts....
you see that the cakes are looking at me and smiling , right ?
eat me...... eat me.....

Creativity came over me today.....

and the fact that I had egg whites just waiting to be used.....you would think that in a country where these grow...


you would be able to buy almond flower...no no no, why should anything be easy.....
and nowhere did I find an almond grinder so what to do ? I got a coffee grinder instead.... and it worked out....have you guessed what I made ? or at least tried to 
next obstacle was no food scale....so I had to measure with my eyes?!

The colours I had was orange or green so I went with the orange today. So far so good actually...I'm glad that I did bring one piece of silicon, for ever lasting baking "paper" with me from home....comes in handy when making macaroons.....again, trying to make macaroons...


they turned out ok...need more silicon baking paper though.....
the filling ?  chocolate !....didn't have any other choice today....


I'm quite pleased with my creativity considering I went on a hunch with all the measurements.....
and they actually taste as macaroons.
Now I'm just waiting for M to bring home some champagne to go with !
I think I'll have to wait for the weekend so I better put them in the freezer......
maybe one with the coffee...... want to taste ?

The final product - pink macaroons



yummy macaroons..and they go so well with champagne or sparkling wine 


Fresita (Chilean sparkling wine made on strawberries ) and macaroons with strawberry buttercream and  chocolate buttercream......yummy yummy 
This is Leilas macaroons recipe

Grundrecept macarons , recipe macaroons4 st ekologiska äggvitor    , 4 eggwhites0.5 dl strösocker , 1/2 dl sugar
150 g skållad och malen sötmandel , 150 grams almond floder4 dl florsocker , 4 dl icing sugarGrundrecept smörkräm, recipe butter cream100 g mjukt smör , 100 gr soft butter1.5 dl florsocker ,1 1/2 dl cing sugar1 tsk vaniljsocker, 1 tsp vanilla sugar 1 st ekologisk äggula , 1 egg yolkNågra droppar valfri hushållsfärg , food colour

Gör så här, Do it like this

1. Macarons
Sätt ugnen på 150 grader., put the oven on 150 degrees celsius
2. Vispa äggvitorna på låg hastighet i en bunke och öka efter hand., whisk the egg whites first on low speed and then higher and higher
3. Tillsätt strösocker, lite i taget och vispa till en toppig maräng., add the sugar , a little at a time and whisk until it's a merengue you can turn upside down
4. Blanda försiktigt ner malen mandel och florsocker, gently add the almond flower and icing sugar that have gone thru a flour sifter,
5. Spritsa eller klicka ut smeten till 50 runda klickar, stora som femkronor, på en plåt med Silpat eller bakplåtspapper., sprinkle about 50 round cookies unto a bakingsheet( silipat or oven paper)
6. Låt kakorna vila på plåten 15 minuter för att förhindra dem från att spricka i ugnen.,let the cookies rest for at least 15 minutes ( so they don't crack when in oven )
7. Grädda kakorna i nedre delen av ugnen cirka 12 minuter, de skall vara lite mjuka i mitten. Bake the cookies on the lower part of the oven for about 12 minutes
8. Dra bort Silpat/bakplåtspappret från plåten direkt och låt kakorna svalna.,pull the oven paper from the baking trey and let them cool
9. Smörkräm, Butter cream
Vispa smör, florsocker och vaniljsocker vitt och pösigt. Whisk butter, icing sugar and vanilla until it's all white and fluffy
10. Vispa ner äggulan.,whisk in the egg yolk
11. Färga med karamellfärg och smaksätt med valfri smak/essens.,put in the food colour and whatever taste ingredients
12. Spritsa ut krämen på undersidan av 25 mandelkakor., sprinkle on half of the cookies
13. Lägg resten av mandelkakorna över som lock., put the other half on as a lid

You can keep them in the freezer in or in the refrigerator.

Cupcakes anyone

For the first time since moving to India I baked today ! I made some cupcakes with cream cheese frosting. Haven´t tasted them yet so I hope they are ok. It´s something sweet for tonight. We have been so good with eating healthy and working out so once in a while you deserve a treat, don´t you think ?

Lunch or fika or both or all meals for the day ?


Today at Vasant Kunj Promenade mall I had to introduce Axel and Elisabeth to Cinnabon. They had the BIG ones with caramel pecan topping. LOTS of calories but I promise - SO GOOOOOOOD !
