Tropical zest

This evening it felt like summer ! and here in India it is. At least if you´re a Swede. So what better way to finish the day off then having Crab Cakes with Mango Salsa and a Corona on the balcony.


If you want to make it yourself here´s the recipe:
For the Crab Cakes
240 grams crab meat 
120 gram breadcrumbs
4 tbsp neutral oil
2 tbsp chives, snipped
1 tbsp coriander, finely chopped
2 eggs, beaten
1 red chilli, deseeded and finely chopped
salt and pepper to taste

For the Mango Salsa
50grams pineapple, chopped
50 grams papaya, chopped,
2 tbsp vinegar
2 tbsp water
1 tbsp lime juice
1 onion, thinly sliced
1 green chili, deseeded and finely chopped
1/2 mango, chopped
 coriander leaves to your taste

For the Crab Cakes
Mix eggs, crab meat, breadcrumbs, chili, chives, and coriander in a bowl. Season with salt and pepper.
Make walnut sized balls of the mixture and shape into cakes. Heat oil in a pan. Fry each cake for three minuteson either side, until golden brown, and set aside on absorbent paper to drain excess oil.

For the Salsa
Mix all ingredients and chill in refrigerator.
